The fit-out of this omakase sushi restaurant by master chefs George Ruan and Daniel Boulud was Shawmut’s third project in One Vanderbilt. Hidden in the tower below Grand Central Terminal, the restaurant includes a Japanese indoor garden entrance, ten-seat counter, eight-seat private room, Jōji Box to-go sushi counter, and a second-floor prep kitchen. Special highlights of the space include live edge shelving, black hand baked scallop tiles, and custom curved walls and ceilings. For the garden, the team installed a black granite disc water feature, Japanese stone wash basin art feature, trees, and 5,000 pound boulders. The location below Grand Central Terminal required extensive coordination with Grand Central operations and the existing base building infrastructure.
