Who was the biggest influence on your career—and why?
I am an avid reader and that has always been a big part of my life. By taking the culinary path, I did not have a traditional education experience. I have read a lot on my own to compensate for that. I found that my mentors, and the people who I "aspire" to be like, have been characters in books instead of people I have worked for. There is no one person I attribute learning from, instead I've taking a lot from both fiction and non-fiction characters I admire.
What’s the best advice you’ve ever received, professionally or personally?
There is a Joseph Campbell quote "Pursue your bliss.” The best thing about that quote is that means something different for everyone.
What’s the nicest compliment you’ve received?
Sometimes the best thing in the world is hearing that your parents are proud. Before my father passed away, he told me he was really proud of me. To hear that meant everything to me.
What was the toughest business decision you ever had to make?
There are so many tough decisions that need to be made on a daily, weekly, monthly, quarterly, and yearly basis. It’s hard to narrow down just one. However, I can say there is something truly empowering about making hard choices that you know are in the best interest of your business.
If you could eat only one meal for the rest of your life what would it be?
Chicken cutlets with a Boston lettuce and avocado salad. That combination, in between two slices of good bread, is equally delicious!
