Shawmut celebrated the opening of RPM Italian in Las Vegas with owners celebrity couple Giuliana and Bill Rancic and Lettuce Entertain You Restaurants partners R.J., Jerrod, and Molly Melman at the grand opening party on Saturday, May 14.
In just over four months, Shawmut completed the remodel of the restaurant space at The Forum Shops at Caesars Palace with designer Rockwell Group and architect Bunnyfish Studio. The almost 9,000-square-foot restaurant was outfitted to include a main dining room with stand-alone and booth options, private dining space, an outdoor patio, and a dedicated sommelier bar. In addition, the restaurant boasts an open kitchen that runs the entire length of the dining room and features an abundance of greenery to match the Italian marble that accents the space throughout.
“Our established partnership with Lettuce Entertain You Restaurants combined with our extensive experience working in fully operational resorts on the Las Vegas Strip provided a solid foundation for our team to seamlessly complete RPM Italian,” said Greg Skalaski, executive vice president of the West region at Shawmut Design and Construction. “Drawing from decades of experience, our team expertly navigated procurement and supply chain related challenges to bring the owner’s vision to fruition. We are proud to celebrate this completion, marking the sixth location for the RPM Brand and sixth restaurant in Las Vegas for Lettuce Entertain You Restaurants.”
RPM Italian is the latest project Shawmut has completed for Lettuce Entertain You Restaurants, one of the largest privately held multi-concept restaurant groups in the country, shortly after the expansion of Joe’s Seafood, Prime Steak & Stone Crab, located directly across from RPM Italian.
